Buyers & Cellars: Chozas Carrascal Roxanne Brut Cava 2022 Utiel-Requena, Valencia, Spain
Jacobsons: “… A classic pairing for traditional method sparkling wine is brie. From the tasting notes, it also indicates that this Cava would also be nice with truffles. With this in mind, I suggest the Truffo. A triple cream with black truffles.”
Buyers & Cellars: Carmen Stevens Chenin Blanc 2023 Paarl, South Africa
Jacobsons: “… I believe goat cheese to be a good pairing and I suggest the Chevre Romarin. This cheese is a firm goat cheese that is covered in rosemary. It should bring out the fruit notes in the Chenin Blanc as well as the minerality.”
Buyers & Cellars: Chozas Carrascal Los Dos Ces Tinto 2021 Utiel-Requena, Valencia, Spain
Jacobsons: “… Bobal is an interesting grape! … [T]o make it a little bit more interesting and to try something different with your group, I am going to suggest Idiazabal instead. This is also a Spanish aged sheep’s cheese.”
Buyers & Cellars: Les Cretes La Sabla NV Aosta Valley, Italy
Jacobsons: “… I think an Alpine cheese is what is needed here, and so let’s go with a real classic. The 18 Month Comte should be a great choice. It has a rich buttery and nutty flavour profile and a fudgey texture.”
Buyers & Cellars: Bononia Istar Cabernet Sauvignon/Cabernet Franc 2022 Danubian Plain, Bulgaria
Jacobsons: “… Lastly, I have chosen a classic pairing for both wines and this type of classic Bordeaux style blend – Cheddar. The 6 year old Silo Cheddar from Quebec is a great ending to the pairings.”
